Ingredients: Serves
2 as main meal
2 medium Aubergines
3 dried chillies
5 tbsp. Olive oil
Salt & black pepper
2 cloves garlic
400g can peeled chopped tomatoes
Method:
Slice the aubergines, sprinkle with
salt and lay in a colander for 15 min. Rinse well and drain.
Chop the chillies finely and remove all the seeds. Mix the
chillies and aubergines in the tray with all the other ingredients,
microwave on HIGH for 8-10 min., and stand for 3 min.
