Braised Beef in Irish Stout

Ingredients:
Serves 4-6
2 Lbs. top shoulder beef
Salt & pepper
2 carrots, sliced
330ml Guinness
2 leeks, sliced
35ml black rum
100g/ 40z mushrooms, sliced
50g/ 2oz Butter
1 onion, sliced
25g/ 1oz flour
½ pint boiling beef stock
Method:
Heat some oil in a frying pan, brown
the beef well and remove to the tray. Sauté the leeks
& carrots and add to the beef. Put the stock, Guinness
and rum into the hot pan and reduce to approx. ¾
pint. Add to the beef and veg. Season to taste. Microwave
on HIGH for 4 min. Stir, and microwave on DEFROST for 60
min. Stir 4-5 times during cooking.
Sauté the mushrooms and onions in hot butter, and
add to the beef and veg. Blend the flour with the remaining
butter in the pan, add to the casserole, stir very well
and microwave for 2 min on HIGH. Allow to stand for 15 min
and serve in a deep dish with lots of buttery mash.
