Beef Burgers with Red Pepper Salsa

Ingredients:
Burgers
1lb 450g Minced Beef
1 Onion, finely chopped and fried
2 tablesp. Chopped parsley
1 Egg yolk
Dash of Soy sauce
Salt & Black Pepper
Ingredients:
Salsa
1 Red Pepper, deseeded & chopped
2 Large tomatoes
1 small red onion, chopped
Juice of half a Lemon
1 Green Chilli, chopped
1 tablesp. Olive Oil
2 tablesp. Parsley or Basil
Salt & Black Pepper
Method:
Mix the Beef, Onion, Parsley, Soy Sauce, Egg Yolk and Seasoning together
Shape into 4 burgers, refrigerate until ready to cook.
Preheat the dish
Cook two burgers at a time, for 3 inutes on the first side 2 minutes on the second.
Ensure the burgers are cooked by piercing them to see if the juices run clear.
Stand uncovered for 2 minutes before serving.
To make the Salsa:
Add all of the salsa ingredients in a food mixer and chop on the pulse setting.
It can be as chunky or as smooth as you like.
Refrigerate until ready to use.
