Ingredients:
2 eggs
3 tbsp. milk
1 tbsp. Brandy
150g/5oz butter
75g/3oz plain flour
2 tbsp. Black treacle
150g/5oz soft brown sugar
75g/3oz self-raising flour
2 tsp. mixed spice
25g/1oz nuts, chopped
25g/1oz glacé cherries, chopped 450g/1 lb. mixed
dried fruit
Method:
In a large mixing bowl, melt the butter
on HIGH for I min. Add the eggs, sugar, treacle and brandy,
blending well. Using a metal spoon, fold in the flours.
Add the spice, milk, nuts, cherries and fruit and stir well.
Spoon into the Microwave Baker with flat base insert and
level the surface. Cook on DEFROST for 40-45 min. Allow
to stand for 30 min before turning out. Decorate with glacé
cherries if desired.
