Glazed Bacon & Redcurrant

Ingredients:
Serves 4-6
1.5Lbs Centre Loin Bacon
2tbsp. Redcurrant jelly
1 tbsp. dark wholegrain mustard
2 tbsp. Port/wine
1tbsp. Brown sugar
Redcurrants, if available.
Method:
Soak bacon in cold water in the dome
cover overnight. Drain, and retain ¼ pint of the
liquid. Blend the mustard and sugar in a cup. Place the
bacon in the tray of the Master Chef, cover with the dome,
and microwave on HIGH for 10 mins, with the tray on top
of the rack. Allow to stand for 10 mins. Spread the mustard
mixture over the top. Cover and microwave at HIGH for 10
mins, transfer to a plate and cover with the dome. Allow
to stand for 15 mins. To the juices in the tray, add the
redcurrant jelly, port/wine, redcurrants and the liquid
retained from soaking the bacon. Stir well and microwave
on HIGH for 2-3 min, or until it boils and thickens.
