Ingredients:

1 med. Aubergine, thinly sliced
1 courgette, sliced
6 tomatoes, skinned and chopped
1 onion sliced
1 green pepper, seeded and chopped
1 sprig thyme
1tbsp. Tomato puree
salt & pepper
2 cloves garlic, crushed
6 tbsp. Olive oil
1 tbsp. chopped fresh basil
Method:
Layer the Aubergine slices in a colander
and sprinkle with salt. Allow to drain for 15 min, then
pat dry with kitchen paper. Mix the aubergine, courgette,
tomatoes, green pepper, onion, tomato purée, garlic,
oil, thyme, salt and pepper in a large bowl. Split between
the three dishes of the 3 piece cook set. Cook on HIGH for
15 min. stirring well every 5-min. Stir in the basil and
season to taste. Serve hot or cold.
