Homemade Chunky Seafood Chowder

Ingredients:
Serves 6-8
1 onion
1 leek, sliced
2 cloves garlic
Chopped parsley
570ml/1pt. Hot stock
1 Medium Carrot, diced
2 medium Potatoes, chopped
456g/1lb. Fresh tomatoes, chopped
450g/1 lb. cod (or other whitefish) cubed
225g/8oz shellfish: mussels, prawns, squid, scallops etc.
Method:
Cook all the veg except the tomatoes on HIGH for 8 min. Season.
Add tomatoes and stock and cook on HIGH for 9 min. Add fish
and cook on HIGH for 5 min. Serve with crusty bread.
